Rice Noodle Ramen

Ramen was one of my favorite quick meals until I found out I couldn't eat gluten. Until today, it's been at least 5 years... but that has now come to an end. After doing some research, I came across this recipe on Don't Eat Wheat. It is pretty spot on, a definite. We also also suggest adding veggies such as peas or mixed vegetables (not shown in pictures).



Ingredients
4 cups chicken broth*
1 tsp salt
3/4 tsp onion powder
3/4 tsp garlic powder
1/4 tsp cumin
1/8 tsp curry
4 oz. rice noodles (size medium)

Directions

Put all ingredients in a medium pot except for noodles, stir together. Bring to a boil.

Once boiling add noodles, and cook until tender.

*NOTE: Our favorite chicken broth is the "Light & Fit" brand from Aldi. When buying broth be sure to check to make sure it is safe. We do not buy any that contains carmel color as well, as it may contain milk and less often, wheat.
