Waffles

In the past we have had a number of issues making waffles, primarily that they don't come out of the waffle iron. However, using Aldi's Gluten Free Baking Mix, that is no longer an issue. These waffles were light, fluffy, and very tasty. They are now in our weekend breakfast rotation.


Ingredients
2 c. Aldi Gluten Free Baking Mix
1/2 c. egg substitute (2 eggs)
1 1/3 c. almond milk
vanilla and cinnamon to taste

Directions
Mix all ingredients in a medium mix bowl until well combined, and there are no clumps.

Heat waffle iron.

Spray with non-stick spray, and then pour in batter.

Cook according to waffle iron directions. They will be a light golden brown when done.

Carefully pull out of iron, Jeremy uses his hands, but tongs (such as the bamboo ones in our store) work well too, and keep your fingers from getting burned.

Serve with your favorite waffle toppings.
